Huevos rancheros is a vegetarian breakfast recipe that offers a ton of protein! Here’s a quick look at what makes it so amazing:
- Eggs: I like my sunny side eggs on the runnier side, but you can cook them to your liking.
- Black Beans: These work with the eggs to create a great amount of protein that’ll actually keep you full until lunch time. Don’t forget to drain and rinse them!
- Tortillas: Flour tortillas are my favorite to use, but you can swap them with corn tortillas if preferred.
Can I make huevos rancheros gluten free?
Sure thing! Just use gluten free tortillas instead of flour tortillas. Corn tortillas are naturally gluten free, so they’re a great option.

Ingredients
- 4 6-inch flour tortillas
- 4 eggs
- ½ cup black beans drained and rinsed
- 1 avocado sliced
- 3 tablespoons extra virgin olive oil
- ¼ cup cheddar cheese
- 2 tablespoons fresh spring onion
- 2 tablespoons fresh cilantro chopped
- 1 cup cherry tomatoes quartered
- ½ onion peeled and diced
- 1 tablespoon white vinegar
- pinch salt
- Juice of 1 lime
- ¼ cup fresh cilantro chopped
- ½ jalapeno pepper chopped
Instructions
In a saucepan, add cherry tomatoes, onion, jalapeno, white vinegar, lime juice, cilantro, and salt.

Cook on medium-low heat for 5-10 minutes (depending on how cooked you like your sauce).
In a separate large non-stick pan, add extra virgin olive oil.

Crack eggs and fry sunny side up for 5 minutes.

Meanwhile, in a non-stick pan, warm the tortillas for 2 minutes on each side, until edges begin to brown.
To Assemble:
Lay tortillas flat.
4 6-inch flour tortillas
Add 1 fried egg on top of each tortilla.
Add 1 tbsp of black beans to each tortilla.
½ cup black beans
Add 1 tbsp of sauce to each tortilla.
Add sliced avocado.
1 avocado
Add lime juice.
Sprinkle fresh cilantro, spring onions, and shredded cheese and enjoy!

Notes
Storage: Huevos Rancheros are best served fresh. Sauce can be stored in the fridge for 3 days.

How to Make Huevos Rancheros Step by Step
Make the salsa:Add 1 cup quartered cherry tomatoes, 1/2 chopped onion, 1/2 chopped jalapeño pepper, 1 tbsp white vinegar, the juice of 1 lime, 1/4 cup fresh cilantro and a pinch of salt to a skillet.
Cook the eggs: Crack 4 eggs into a pan and fry sunny side up for about 5 minutes.
Warm the tortillas: Warm 4 6-inch tortillas in a pan for about 2 minutes per side to brown.
Assemble them: Lay the tortillas flat. Add 1 fried egg, 1 tbsp black beans, 1 tbsp salsa, sliced avocado, lime juice, and any other desired toppings to the huevos rancheros.
